Hoy vamos a explicar cómo hacer turrón blando casero. El turrón blando es uno de los más típicos junto con el duro, también conocido como Jijona (blando) y Alicante (duro) cuando tienen el sello de la denominación de origen.

1. Tostaremos las almendras molidas en una sartén a fuego medio. Recomendamos comprarlas ya molidas porque triturar la almendra entera puede ser un poco complicado. Como siempre, recomendamos utilizar la variedad de almendra marcona. Remover hasta que estén tostadas.

5. Poner la mezcla en una especie de molde, añadir la canela por encima y tapar con un film y un peso para que quede bien prensado. Tendremos que esperar unas 6 horas hasta que la masa se enfríe para poder consumirla.

En el turrón de Jijona que fabricamos solemos utilizar la siguiente cantidad de ingredientes 70% de almendra marcona tostada, 17% de miel, azúcar y albúmina de huevo. Cuando preparamos el turrón en formato de tarta también añadimos canela por encima.
